Traditional Irish Breakfast


Ingredients:

8 Irish sausages (Bangers)
8 slices of traditional Irish bacon (Rashers)
1 packet of black breakfast Pudding
1 packet of white breakfast pudding
4 boiled potatoes (medium-sized and sliced)
4 tomatoes (medium-sized)
4 large eggs (preferably free-range)
1 16 oz tin of baked beans
Irish Butter
Salt & Pepper to taste
Irish Tea
Toast (trust no directions necessary for toast!)

Directions:

  1. Pre-heat oven to low heat (175F or so).
  2. Pour baked beans into a saucepan and warm over low heat.  Reduce heat as necessary while cooking the other ingredients.  Beans only need to be warmed.
  3. On low to medium heat, melt the butter in a large frying pan.
  4. Once melted, add bacon and cook until slightly browned (do not cook until crisp!).
  5. Move bacon off to side of frying pan (it's cooler there, and add sausages.  Cook until browned.
  6. Remove bacon and sausages, and drain on paper towel.  Place on large dish, and then into oven to stay warm.
  7. Cut the tomatoes in half and add, together with slices of the black and white puddings, to the frying pan.  Add slices of boiled potato.  Fry all in remaining bacon grease until done.
  8. Transfer contents of frying pan to large plate in oven to keep warm.
  9. Use the frying pan to cook eggs to order.  Generally, eggs are cooked over-easy (turned over in the frying pan so that both sides are cooked, with the second side cooked only lightly) and the yolk is still soft.
  10. Remove contents of oven and serve all with salt and pepper to taste, as well as Irish tea and toast with Irish butter.

Instead of fried potatoes, some people use Boxty, or traditional Irish potato cakes.
