Boxty, or traditional Irish potato cakes, is a simple but delicious meal. It has history behind it and is even celebrated is an old Irish poem:
Boxty on the griddle,
Boxty in the pan,
If you can't make boxty,
You'll never get a man.
Boxty in the pan,
If you can't make boxty,
You'll never get a man.
This recipe should make approximately 8 servings.
Ingredients:
½ lb raw potato (approx 1 cup)
½ lb mashed potato (approx 1 cup)
½ lb plain flour (approx 1 cup)
1 large egg
1 tsp salt
Milk as needed
Pepper to taste
Irish butter, vegetable oil, or bacon fat
Directions:
- Grate the raw potato coarsely into a bowl.
- Add the mashed potatoes to the bowl and mix.
- Beat the egg and then add it and the flour, salt, and pepper to the mix. Mix well.
- Add just enough milk (if any) to the mixture to allow it to drop off the end of a spoon.
- Drop generous dollops of the mixture into a frying pan on medium heat. Some people use bacon fat to cook these, but butter or oil is also sufficient.
- Cook for 3 or 4 minutes per side.
Normally served with apple sauce or as part of a traditional Irish breakfast.
