Champ


Champ is a wonderfully economical and tasty dish. It is also very filling and quite easy to make. This recipe should make four servings. There is another dish called Colcannon that is very similar, but is made with the addition of cabbage.

Champ can be served both by itself, and also as a vegetable dish with a full meal. Either way, you won’t go hungry!
 
Ingredients:
 
4 lbs Potatoes
½ lb Scallions (Spring Onions)
1/3 cup of milk
4 tbsp. butter
2 tsp salt
 
Directions:
  1. Peel potatoes and boil. Cook until done.
  2. Finely chop the scallions – you can use both the white and green parts of the stem.
  3. Simmer the scallions in milk for approximately 5 minutes so that it is finished at roughly the same time as the potatoes.
  4. Once done, remove potatoes from heat, drain, and mash. 
  5. Combine and mix the mashed potatoes, the salt, the milk and scallions, and half of the butter.
  6. Place each serving on a plate and dimple the top with a small depression. Divide the remaining butter into each depression so that the Champ is served with a small “bowl” of melted butter on the top.
